Lemon Butter Chicken

This was So yummy on a cold winter night!

Easy crisp-tender chicken with the creamiest lemon butter sauce ever - you'll want to forget the chicken and drink the sauce instead!


  • 8 bone-in, skin-on chicken thighs
  • 1 tablespoon smoked paprika
  • Kosher salt and freshly ground black pepper, to taste
  • 3 tablespoons unsalted butter, divided
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup freshly grated Parmesan
  • Juice of 1 lemon
  • 1 teaspoon dried thyme
  • 2 cups baby spinach, chopped

  • Preheat oven to 400 degrees F.
  • Season chicken thighs with paprika, salt and pepper, to taste.
  • Melt 2 tablespoons butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; set aside.
  • Melt remaining tablespoon butter in the skillet. Add garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in chicken broth, heavy cream, Parmesan, lemon juice and thyme.
  • Bring to a boil; reduce heat, stir in spinach, and simmer until the spinach has wilted and the sauce has slightly thickened, about 3-5 minutes. Return chicken to the skillet.

This is my favorite soup from msflourgirl.com!  A great way to stay warm this week!

Stuffed Bell Pepper Soup

1 pound Italian hot sausage

1 pound lean ground beef

2 cans (14 0z) diced tomatoes

2 cans (15 oz) tomato sauce

2 cups cooked white rice

4 cups chopped green bell peppers

2 envelopes lipton onion dry soup mix

2 beef bouillon cubes

1/4 cup packed brown sugar

4 tablespoons apple cider vinegar

2 1/2 cups water

shredded mozzarella cheese


Brown meat thoroughly. Drain grease and combine with dry soup mix in a large pot. Add remaining ingredients (except rice) and bring to a boil. Reduce heat and simmer for 30-40 minutes or until peppers are soft. Add rice and simmer for 5 more minutes. Scoop into bowls and top with shredded mozzarella cheese.

My sister-in-law told me the best thing to shine/clean up her ring is a little toothpaste.  Tried it last night and it worked like a charm!  I used a toothbrush and a touch of toothpaste and worked it into the small areas around the diamonds and it totally removed the soap scum!  You should see the way it sparkles now!

I had a four year old patient tell me today that she was turning into a werewolf.  I asked her why she thought she was changing into a werewolf. 

Her reasoning:

1. She has pointy teeth.

2. She pointed to her legs and exclaimed "And hair is growing on my legs".

I laughed so loud!

FDA update: Benzocaine Products

Please be careful with teething gels for babies due to a risk of methemoglobinemia, a condition where the amount of oxygen is reduced in the blood.  The Academy of Pediatrics recommends to use a chilled teething ring or massaging your babies' gums.

White Chocolate Pie...Mmmm....

My first attempt at a pie and loved it!  It was great with a premade pie crust, reduced fat cream cheese, and 1% milk!





1 1/4 cup graham cracker crumbs

2 tablespoons sugar

7 tablespoons melted butter

2 cups milk

1 8oz package cream cheese, softened

2 small boxes of JELL-O white chocolate pudding (instant)

1 8oz container of cool whip, thawed


To prepare the crust; add the sugar to the cracker crumbs and mix. Pour in the melted butter and combine until moistened. Pat into a pie plate and set aside.

To make the creamy pie filling; mix cream cheese with 1 cup milk until well blended on low speed of mixer. Add the rest of the milk and pudding mix and continue to blend on low-med speed. Once mixture is smooth, gently fold in the cool whip . Pour into the prepared crust and refrigerate for 4 hours. Top with shaved white chocolate or white chocolate chips and drizzle with a chocolate sauce or hot fudge topping.

Note: If you don’t have white chocolate for the top, chopped macadamia nuts are great with this pie.

For the crust; pour melted butter into cracker crumb mixture

Fold in cool whip

Pour into prepared crust, cover and refrigerate for 4 hour

Top with white chocolate and chocolate sauce

It’s irresistible!
